Falcons lose to the Cowboys

It was a disappointing night for the Falcons in Dallas Sunday night.  I wasn't able to watch the entire game but did listen to it on the radio, Dave FM 92.9.  The Falcons looked good on the first drive of the series by marching 80 yards down the field but after that their offense and defense simply stalled out on them.  It seems like they consistently gave up the long pass plays to the Cowboys because the coverage broke down due to the lack of pressure on the quarterback.  Let's hope their loss won't affect the New Orleans Saints game next Monday night.  Get to work guys!!!

Fantasy Football Failure - part 2

So, after my post about how awful I am with Fantasy Football on Yahoo.com, I have won the last two weeks.  I guess I'm not as bad as I thought or the other fantasy leaguers are just giving up because they know I will win the whole thing anyway. 

I'm in two leagues and I have completely different records in both.  The Pineville Mayhem league was started by a friend in an online game that we both play, World of Warcraft, and I won the first three games only to lose the last two.  After tonight though, I will have won my 4th week after defeating the undefeated South City Storm by .04 points.  Now that is close.

My IT Fantasy Football 2009 league has me losing the first 4 games before finally winning in week 5.  As of today, I am expected to thoroughly defeat the Heavy Underdogs to get out of the gutter in this league.  Sorry Rob but you should have updated your players that had a Bye week.....lol

I can see the light at the end of the tunnel and I fully expect to be in first place at the end of the season in both leagues.  I cannot and will not be defeated.

Monday Night Football

Edit:  I was planning on posting this prior to the game in November but was told the party was a surprise party and Chip "might" find my little blog that has nothing to do with anything he is interested in and find out about the party.  I'm sure he already knows about the party.  Oh well, I guess I will be nice and not post this until after the game. 

It is entirely possible that the Monday Night Football game against the Atlanta Falcons and the New Orleans Stanks will not only be a football party as was planned but will be rolled into a good ol' fashioned birthday party for one of the hosts.  Now I have to show up with a present or I will look like someone who doesn't support birthdays. 

I have done some research and have found a couple options for a present for the Chipster.  Browse thru them and if you feel froggy, let me know which one is the best choice.

Fantasy Football Failure!

I'm in a fantasy football league for the first time ever and I'm doing awful.  I'm 0-4 so far and I just don't get it.  I've picked the best players but they continue to underperform.  Every week I switch out the poor players for better players and keep getting bit in the ass.

As for week 4, I had Matt Ryan and Roddy White on my fantasy team and this was their Bye week.  I am very confident that I moved them to the bench before the cut-off last week but there they were, big fat 0's in their column.  I'm beginning to wonder if I should even be hosting a football party!!

Only a few more weeks before the Monday night game against New Orleans.  Let's hope the Atlanta Falcons are able to bounce back after last weeks loss to the Patriots.  See you soon

Falcons lose to New England Patriots

It's inevitable that the Atlanta Falcons will lose but to lose to the Patriots when the day of Tom Brady domination is over???  The Falcons were picked to win by 3 of the 5 Fox Football Sunday crew because of Matt Ryan and his cool demeanor on and off the field.  Boy, were they surprised!

Now, it's not Matt's fault that they lost to the Patriots.  There is a long standing tradition for the Patriots when facing a first time opponent to their home field.  I heard a stat that the Patriots have won 25 (now 26) of the last 29 (now 30) games against teams that have never traveled to their home turf.  Wow!  Hard to fight those odds. 

The Falcons had a chance to gain some momemtum in New England on Sunday but the Patriots had a better offense in the second half of the game. 

Now, the New Orleans Saints looked good offensively and defensively against the Bills.  Now, don't get me wrong but aren't the Bills a lot like the Detroit Lions (Detroit finally breaks 19 game skid)?  Is it a big surprise that the Saints won yesterday?  Not really.  Hopefully the Saints will realize they don't have a chance against the Falcons and the Saints will start losing now to prepare for their ultimate defeat by Matt Ryan. 

And finally, this goes out to Anna.....what are you planning on serving for the Monday night game?  I'm gonna be very hungry that night so I hope you have come up with an elaborate menu.  There won't be much need for you or Chip to leave the kitchen because there won't be much to see other than the Saints getting thrashed by the Falcons!!!

Gator Taters recipe

So, I have been looking for gator meat online and haven't had much luck with the price.  I have a local butcher that might have some in his retail store so I'm going to check with him tonight.  He sells a lot of specialty meats and sausages so I hope he has some gator tail meat or can get some for me.

If the gator meat is found, the recipe that I will use is below.  The only part I won't use is the baked potatoes but I'm leaving it in just in case someone else wants to use it in its entirety.

Gator Tators

Fried Gator:
2 pounds gator tail cut into chunks
salt and pepper
flour
buttermilk
16 ounce vegetable oil

Baked Grilled potatoes:
4 potatoes
1/2 pound butter

Potato sauce:
1 sweet onion, chopped
1 cup mayonnaise
1/4 cup sour cream
salt and pepper
2 cups grated cheese, optional

In a large bowl, toss the gator chunks into the buttermilk, and dredge with flour that has been seasoned with salt and pepper. Using a large skillet, heat oil to 350 degrees and fry gator chunks until golden brown, approximately 4 to 5 minutes.

In a bowl, combine all of the ingredients to make the potato sauce, and mix well.

Wash and coat potatoes with a little bit of oil. Pierce each potato with a fork, wrap in tin foil, place directly on hot coals, and cook for approximately 45 minutes. Use tongs to turn potatoes often. Split potatoes and top with butter and potato sauce. Top potatoes with two pieces of fried gator chunks on top and sprinkle with cheese if desired.

Menu for the Saints-Falcons football party

These are just some ideas I have so far for the party.  These are my notes so if they don't make sense to you, oh well.  They make sense to me.
Nutria Poppers – Corn pops with licorice (tail) corn nuts, peanuts, marshmallows
  ** For those of you that don't know what Nutria are, this is my take on a quick snack in honor of the Nutria from Louisiana.
Pat O’Brien’s Sidewalk Scrapings - chunky guacamole
 ** This is in honor of the leavings of many drunks the next morning in front of the bar
Pigeon Shit Pudding – figure out some concoction for this pudding mixture.  Maybe buy a cheap statue and drizzle the pudding mixture over it???
Gator Tators – sausage balls to resemble gator balls
Crawfish boil or jambalaya with crayfish and seafood/sausage/chicken – crayfish, corn, sausage, rice, chicken, mussels.  I have decided to go with the Brutus' Jambalaya.

Jambalaya recipe

Ok, this looks like the best and simplest recipe for jambalaya.  I had to substitute chicken for the duck (not sure if duck is normal but meh!).  I plan on making this in the coming weeks and will post about the results.  Maybe add a few pictures too.
Brutus' Jambalaya

Ingredients

  • 1 (5-pound) chicken, cut into 8 pieces
  • 1 teaspoon salt, plus more for seasoning chicken
  • 1/2 teaspoon freshly ground black pepper, plus more for seasoning chicken
  • 2 tablespoons vegetable oil
  • 1 pound andouille or other spicy smoked sausage, diced
  • 2 cups chopped yellow onions
  • 1/2 cup chopped green bell peppers
  • 1/2 cup chopped red bell peppers
  • 1/2 cup chopped celery
  • 1/2 teaspoon cayenne
  • 2 tablespoons Creole Seasoning (I like Emeril's Creole Seasoning so I will use that instead, see recipe below)
  • 2 cups peeled, seeded, and chopped tomatoes
  • 1 tablespoon chopped garlic
  • 3 bay leaves
  • 2 teaspoons minced fresh thyme leaves
  • 2 quarts chicken stock or canned low-sodium chicken broth
  • 3 cups long-grain white rice
  • 1 pound small shrimp, peeled and deveined
  • 1 cup chopped green onions (green and white parts)
  • 1/2 cup minced fresh flat-leaf parsley 
  • 1 pound raw or cooked crawfish (if raw, add 10 minutes before cooking is over)

Creole Seasoning

2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 1/4 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper or red pepper flakes
1 tablespoon dried oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly.
Makes about 2/3 cup

 Directions

Season the chicken pieces with salt and pepper.
Heat the vegetable oil in a large heavy pot over medium-high heat. Add the chicken, skin side down, and sear for 5 minutes. Turn and sear on the second side for 3 minutes. Remove from the pot and drain on paper towels.
Add the sausage to the fat in the pot and cook, stirring, until browned, about 5 minutes. Add the onions, bell peppers, celery, salt, cayenne, 1 tablespoon of the creole seasoning, and black pepper and cook, stirring often, until the vegetables are softened, about 5 minutes. Add the tomatoes, garlic, and bay leaves and cook, stirring, until the tomatoes give off some of their juices, about 2 minutes.
Add the thyme, stock, and chicken. Bring to a boil. Reduce the heat to medium-low, cover, and simmer, stirring occasionally for 50 minutes.
Remove chicken pieces from the jambalaya and cool slightly. Skim the fat. Discard skin and bones and shred chicken meat.
Add the rice and bring back up to a simmer, cover and cook until the rice is barely tender, about 10 minutes.
Return the chicken meat to the mixture. Season the shrimp with the remaining 1 tablespoon creole seasoning. Add the shrimp and crawfish (if raw) to the pot, return to a simmer, and cover. Remove the pot from the heat and let sit, covered, for 15 minutes.
Add the green onions, crawfish (if cooked already) and parsley to the jambalaya and stir gently. Remove and discard the bay leaves. Adjust the salt, pepper, and cayenne to taste. Serve directly from the pot.

Buying crawfish online is expensive!

So, I have done the research and have determined that a crawfish boil is out of the question.  It is just too expensive to buy crawfish online this time of the year.  Most of the online purveyors of live crawfish are either out of crawfish already or don't sell crawfish online any longer.  I guess I will be forced to make the jambalaya (not a big deal really) and see if I can find a pound or two of cooked, whole crawfish to add to the jambalaya.

Crawfishguy.com no longer ships crawfish

Well, I was browsing the crawfish sellers websites and it looks like the Crawfish Guy has discontinued the shipping of crawfish.  Not sure why they don't ship any longer but whatever.

They do have a really cool gadget on their site called the Cajun Microwave.  Pretty neat gadget.

Where do I buy crawfish online?

I found myself looking for a place to purchase crawfish online the other day for a football party against the New Orleans Saints and the Atlanta Falcons in December 2009.  I am hosting a party for some rivals of mine at work who follow the Saints like the gospel.  

While I was chatting with my rival, we decided to have a party and it would be up to me to design the menu.  I thought it would be funny to come up with funny names for the dishes I was going to prepare and this blog will detail my journey to December 13, 2009.  

The first thing I wanted to do was have either a crawfish boil or make jambalaya with crawfish and sausage and such.  My first task is to find a website online that will ship live crawfish to me.  I can't find crawfish anywhere in Georgia that is close enough to drive the day before the big game so I am resorting to the internet.
